This month's Province to Plate menu showcases the very best of the Pacific Northwest with a hyper-local, seasonal three-course experience built in collaboration with our trusted farmers, fishers, and artisans. Featured this month: wild BC spot prawns - harvested from the cold, pristine waters off the coast of British Columbia and the Pacific Northwest. Prized for their sweet, delicate flavour and buttery texture, these coveted crustaceans are only available for a few short weeks each spring.
